Feels Like Winter: Thunder & Honey Cocktail

We’re kicking off our NED Winter Cocktail Series early. Sure, it’s not quite winter yet, but a couple of cold, wet nights have already got us experimenting.
The winter cocktail season is all about simple, flavour-forward drinks you can make with ingredients you probably already have at home. We’ve always believed drinking cocktails is more fun than making them - so we’re keeping things simple, easy, and tasty.
First up is Thunder & Honey. It’s a basic, booze-forward but easy-sipping cocktail, named so because there was thunder outside when we were making it there's honey in it.
We reckon it works best with the classic 40% NED Australian Whisky. A touch of citrus - and a dash of bitters if you’ve got 'em - cuts through the warming sweetness beautifully.
We serve it over ice, and it works a treat. That said, we’re also playing around with a few hot versions as the temperature drops. There might be a variation we post soon.
As it stands, this one’s a great pick for now, when the season's starting to turn.
INGREDIENTS
- 45ml NED Australian Whisky (we use the classic, but Green Sash would work also)
- 20ml honey syrup (a 1:1 mix with hot water)
- 15ml lemon juice
- Dash of bitters (optional)
METHOD
- Mix up the honey syrup and then stir with the whisky and lemon juice over ice in a short glass. Dash of bitters over the top if you want to break up the sweetness further.
- Lemon peel works well as a garnish if handy.
